Ready for the Oven
You can freeze the Breaded and Baked slices (I put them between layers of paper towels in a freezer bag to keep them from getting freezer burn) for about 6 months.

damn i'm glad it's lunchtime. i'm not even a fan of eggplant but that looks freakin' YUMMY!!!
