Frittatta with Spam for breakfast

This morning we had breakfast on the deck. It was a cool non-humid morning, a beautiful change from the weather we've been having.

Frittatta with Spam:

Preheat the oven to 375 degrees

1 large onion, chopped
handful of mushrooms, chopped
handful of parsley, or spinich, for the green color
half a small can of Spam, cubed
Enough grated cheese to cover top of pan
5 eggs
water
olive oil

In an oven proof frying pan, saute the onion, mushrooms, and greens on med heat with a little salt until soft. In a small bowl, beat the eggs with enough cool water to fill a half eggshell 5 times. Throw in the spam and egg mix, and turn the heat down to low, and cover. Let it cook slowly from the bottom for 5 minutes. When the timer goes off, cover the top of the egg mix with cheese, and transfer the whole pan into the oven for another 5 min. When the timer goes off, remove from oven. If it's done, it should be set up - when you shake the pan, it doesn't move around. If it's still a little loose, you can put the cover back on, and let it finish cooking in the residual heat from the pan.
